Butter Bean Blondies

Flourless, gluten-free and with only 73 calories per serving, there’s no reason to say no to these moist and gooey bars!

Ingredients:

  • 1 can butter beans 
  • ½ cup mashed banana 
  • 2 tsp. vanilla extract 
  • 2 medium eggs 
  • ¼ cup maple syrup 
  • ¼ tsp. salt 
  • ½ tsp. baking soda 
  • 1 tsp. baking powder 
  • 1 tbsp. coconut oil 
  • Nonstick Spray 
  • Confectioners Sugar (optional) 

Directions:

  1. Preheat oven to 350F°.
  2. Drain and rinse the beans and toss all ingredients to a blender and blend until smooth. 
  3. Lightly coat a 7x11inch baking pan with nonstick spray. 
  4. Pour batter into pan and bake for 25-30 minutes. 
  5. Remove from oven and let cool. 
  6. If desired, sprinkle with confectioners sugar, cut into squares and serve. 

Yields: 12 Bars
