A delicious and moist chocolate cake with a scent of orange.
Ingredients
- 7oz (200g) dark chocolate (70% cocoa), melted
- 1/2 cup + 2 tbsp. (125g) sugar
- 1 cup (100g) almond meal (or ground almonds)
- 3 egg yolks
- 3 egg whites
- 1 orange
- 1/2 tsp. baking powder
Instructions
- In a pot with water, boil the orange whole for 1 hour. Add water if needed.
- Cool the orange completely. Reserve 5 tbsp. of the cooking water.
- Cut the orange in half. Remove the seeds.
- Place the orange in a food processor together with 5 tbsp. of water. Puree.
- In a bowl, mix the sugar, melted chocolate, almond meal, yolks and orange puree.
- Beat the egg whites to stiff peaks.
- Gently fold the egg whites into the chocolate mixture.
- Grease a 20cm (8 inch) round baking pan with butter. Line the bottom with parchment paper.
- Pour the batter into the pan.
- Cook in a pre-heated over at 356°F (180°C) for 50 minutes. Halfway through, cover the pan with aluminum foil to avoid burning.
- If the cake looks under cooked when you take it out from the oven, don’t worry. It will firm up as it cools.
- Let it cool completely. Run a knife around the edges of the pan and remove the cake from the pan.
