There is just something so refreshing about cool sweet watermelon on a hot summer day, and if you are looking for a great way to use that leftover watermelon and other seasonal ingredients you may have sitting around in your refrigerator – you will absolutely want to dig into the Watermelon and Feta Salsa. Although 92% water, watermelon boasts a significant amount of immune-boosting Vitamin C, A and potassium combined with antioxidant-rich tomatoes, you have one delicious, nutrition-packed dish! Mint may be small in size, but it also contains antioxidants, Vitamins A and C. Not to mention mint also helps fight off bad breath! Don’t forget to pair this salsa with toasted whole-wheat pita triangles and you have a delicious, nutritious sweet and savory snack.
Watermelon and Feta Salsa from Too Hot in the Kitchen: Secrets to Sizzle at Any Age
Makes 16 (1/4-cup) servings
4 cups chopped watermelon
1/2 cup chopped red onion
1/3 cup crumbled reduced-fat feta cheese
2 tablespoons chopped Kalamata olives
2 tablespoons seasoned rice vinegar
2 teaspoons olive oil
1/4 cup chopped fresh mint
1. In small bowl mix together all ingredients. Serve.
